Food Hygiene
Course: Food Hygiene - FETAC - Level 4

Regulation (EC) No. 852/2004:
Training: Pursuant to the above Regulation all food handlers must be supervised and instructed and/or trained in food hygiene matters commensurate with their work activity.
FSAI Level 1: Stage 1
Must be completed before the employee commences work.
The training should be followed by close supervision.
FSAI Level 1: Stage 2
Employees involved in a high risk activity must complete this stage within the first month of employment.
Employees involved in a low-risk activity must complete this stage within 3-6 months of employment i.e. Waitress/Waiter. The training should be followed by close supervision.

- Time temperatures controls
- High risk and low foods

- Food Preparation, Cooking, Cooling, Reheating, Hot holding
- Pest Control and Waste Management
FSAI Level 2 - Additional Food Safety Skills Introduction
Employees who have completed Level 1 (stages I and 2) and are continuing to work in the food business are required to have additional food safety skills.
The timing of this training depends on whether they work in a high or low-risk area.
Level 2 consists of 25 skills which should be completed within:
3-6 months if working in a high-risk area and 6-12 months in a low-risk area.

Information about this Online Programme
The Certificate in Food Hygiene is delivered through comprehensive notes and Powerpoint presentations at both Stage I and II of Level I of the FSAI Guidelines.
The Examination is conducted through a timed Multiple Choice Exam and Certificates are issued five days after completion of the examination once the candidate is successful. This course is accredited by Bourke College Dublin.
